Is this like a modern take on Heretic/Hexen?

Something somewhat similar yeah. A bit more simplistic in a way but has better combat audiovisual feedback than those classics

I'm curious if picking the best gaming distribution is important. I used to play games in Linux (Nobara), but I stopped since I couldn't get my monitor to go from 60 to 80hz. At 60Hz, games feel choppy. I can easily overclock in Windows by using CRU. It was so difficult back then merely to figure out how to overclock the monitor. Is there no equivalent software to CRU in Windows that can easily overclock the monitor?

Endeavour (or Arch), Nobara, PopOS maybe Linux Mint are probably the best choices for gaming, depending on the needs. I never done overclocking on my monitors, since i bought high refresh ones already but im pretty sure you can do it with xrandr by adding new cvt's . Theres also xvidtune tool that can show the pixel clocks etc as detailed info to then add new metamode/profile for monitor. But yeah i have no experience with it.
